Minestrone Soup & Salad Dressing


Soup ingredients: 

4 cups vegetable broth
1(28oz. ) can diced tomatoes
1(15oz.) can white Cannelloni or navy beans, drained
2 carrots, peeled and chopped ( I like to just use canned carrots)
2 celery stalk, chopped
1 cup onion, chopped
1 teaspoon dried thyme
1/2 teaspoon dried sage
2 bay leaves
1 medium zucchini, chopped
2 cups coarsely chopped fresh or frozen spinach, defrosted
1 cup pasta (organic whole wheat) Albertsons, Sprouts, or Fresh and Easy

Directions: 

Put all ingredients except pasta in a large pot on stove. Bring to a boil then reduce heat simmer until all veggies are soft but not mushy. May take 1-2 hours, or you can use a slow cooker. Place Pasta in pot the last 20 minutes otherwise pasta will be mushy. 

Suggestions: You can add any veggie or spice you like.. make it our own.


Salad & Dressing ingredients: 

Iceberg lettuce                               
Red onion
Avocado
Cucumber
Carrots
Or anything else you like

Dressing: 

Extra virgin olive oil
Garlic Salt
Garlic powder
Red wine vinegar or apple cider vinegar
Salt & Pepper
Fresh lemon juice

I don't measure anything I just pour and sprinkle to taste.
