Potato Tacos



Ingredients:

  • 1/2 onion, chopped
  • 1 clove garlic, minced or mashed
  • 4-6 large red potatoes, un-peeled and diced
  • 1 small green bell pepper, diced
  • 1/2 lb. soy meat substitute, crumbled veggie burgers, or soy chorizo (make sure it's vegan)
  • 1 teaspoon chili powder (season according to desired flavor)
  • 1 bay leaf
  • 1teaspoon grape seed oil
  • salt and pepper
  •  corn tortillas
  • salsa

1. Saute onions and garlic until onion is translucent.

2. Add meat substitute and brown.

3. Add bell pepper, potatoes and all spices. Season with salt and pepper.

4. Reduce heat to low and cook about 30 minutes. Add a little vegetable stock if potatoes get too dry.

5. Preheat oven to 350. 

6. Microwave tortillas until soft. ( put tortillas in a zip lock, but don't seal, with a wet paper napkin so they wont dry out)
