Ingredients:


  • 1 cup whole wheat flour (any grocery store carries this)
  • 1 cup almond or soy milk
  • 1/4 cup applesauce
  • grape seed or olive oil
  • 1/4 cup agave syrup ( I purchased this at Fresh & Easy)
  • 1/2 cup frozen blueberries

1. Mix flour, milk, apple sauce, pinch of salt, and one tablespoon of oil. The mixture will be kind of lumpy.

2. Sprinkle in 1/4 cup of blueberries and stir.

3. Heat about a teaspoon of oil on a non-stick pan or griddle on medium heat. You can use non-stick spray also.

4. Pour about a 1/4 cup of batter on the pan and spread it evenly with the back of a ladle, forming a circle. This is important. Don't make the pancakes too thick. They won't cook all the way through and they will fall apart when you to flip them if too thick.

5. Allow pancakes to get bubbly and almost dry on top before you flip them. Because the mixture doesn't have any baking powder, these pancakes are not going to be fluffy and doughy. They are kind of thin a crepe-like. 

6. Combine remaining agave and blueberries and microwave for 30 secs. Lightly drizzle blueberry syrup over pancakes.

Makes about 6 pancakes.

You can add grated apples or pears, chopped bananas to the batter.
